Heck, if there's a reason to make a dessert we'll find it. And, Father's Day is a good enough one for me.
The recipe we used kicks ass. These are Vegan Peanut Butter cookies with only the good kind of butter in them...peanut butter. We altered it a bit using 1/2 of light brown sugar and 1/2 cup of cane sugar. We also used half peanut butter and half a blend of almond butter with chia seeds. It was easy to make and the taste YUM.
